GI, or Glycemic index, is a measure of food's effect on the body's blood sugar levels. It is important for health both physical and emotional, as body's sugar does not surge and then drop suddenly. Eating low GI foods helps the body to maintain the blood sugar level within a reasonable range. When the blood sugar peaks and then drops it has effect on moods. It also increases food craving and binging. Thus, eating low GI help to control mood swings easier to lose weight.

Why vegetarian food?

 

The health factors are dependant on the food choices. Eating healthy foods, which are also antioxidants such as vegetables and fruits. They contain phytochemical like carotenoids and flavonoids neutralizes the free radicals that causes the degenerative diseases. The GI can be applied to foods with reasonable amounts with reasonable carbohydrates content. Many fruit and vegetables contain very little carbohydrates and high in fiber. This translates into low GI food that is filling, that is because of the fiber and excellent source of nutrients. Vegetarian food is also quite tasty when properly prepared. Generally, the more colorful a vegetable the better they are.

Fruit, generally fall into low GI range, with GI< 55.Fruit also has a high fiber content, and the natural sweetness comes from fructose which is low GI naturally occurring sugar. The vegetarian food boost HDL cholesterol, and bad cholesterol comes from meat and animal product. HDL (high density lipoproteins) carries cholesterol from the body's tissues to liver. It is hypothesized that HDL can remove cholesterol within arteries and transport it back to the liver for execution or re-utilizes which is the main reason why HDL bound cholesterol is sometimes called good cholesterol.
