GI index is a chart that compares different foods for the rise in the blood sugar levels when taken by an individual. A food contains high GI index release high level of glucose level in blood whereas a low GI index level food releases glucose in a gradual manner. A GI index chart is prepared by mapping the rise of glucose level in the body after ingestion of a particular carbohydrate food. Generally a person is told to take carbohydrate supplements of about 50 grams. The values of the curve for 10 humans are then averaged to give accurate results.
The Difference:

The values of the chart are noted and then it is categorized into three different GI levels. The levels that differentiate the carbohydrate foods are Low GI level, High GI level and Medium GI levels. A low GI level carbohydrate food is within the range of 0 to 55 while a medium level GI is about 55 to 69and a high level GI has the value of 70 to 100.

A high GI level releases large amount of sugar level in the body in less amount of time. That means that the body easily digest the food and in quick time. This sudden rise of glucose level feels appetizing and lets the individual think that he is fuller. But then after some time the individual feels hungrier as the food that he has taken had fully burned and the excess glucose is stored by the body. This is converted into other forms like fats. Fats are the last one to burn to give energy so the individual carves for more food ultimately eating more and storing more fats in the body.

While a Low GI level food is slow in releasing the food that means it digests the food more slowly and gradually. As the food is digested gradually so the glucose is released by proper intervals providing the supply to the energy demands. During this process the person feels much fuller and there are no carvings for more food.

High and Low GI foods:

A low GI diet is thus helpful in loosing weight. The food types coming in this category are Cherry, apples, bean, kiwi, lettuce, spinach, strawberry, peach, tomato zucchini, orange and cauliflower. While a High GI diet foods include potato, muffins, white bread, all types of rice and flour, Pasta cereal and bagel. More a food in Low GI levels better they are for an individual's health.
